Chorizo Stuffed Peppers
Ingredients
1 lb. BOULDER SAUSAGE brand Chorizo
1 cup white rice
1/3 cup Italian bread crumbs
1 tablespoons olive oil
3 green bell peppers
Preparation
- Pre-heat oven to 400°. Cook Chorizo on medium heat until cooked through. While cooking sausage, prepare one cup of white rice.
- When sausage is finished, drain, add rice, Bread crumbs and olive oil to pan and mix.
- Place mixture inside hollowed bell peppers. Place on cookie sheet and bake at 400° for 10 minutes, and serve.
