Italian Sausage Soup
2 packs BOULDER SAUSAGE brand ground sausages (Italian & Hot Italian)
1 green pepper, chopped
1 onion, chopped
4 cloves minced garlic
2 teaspoons basil
2 cans beef broth
2 cans diced tomatoes (Italian)
4 12oz. cans beans (black, pinto, butter, northern, or kidney)
- Brown and drain the sausage.
- Sauté the onion, pepper, and garlic until garlic is fragrant.
- Add sausage to pan and mix thoroughly. Then add mixture to large pot. Add basil, broth, tomatoes, and beans. Cook over medium-low heat until simmering, stirring occasionally.
- Serve hot–perhaps with breadsticks and enjoy!
